Madras Curry Paste (Cumin and Chilli) Hot

Madras is one of our most popular curries - hot, spicy and usually a lovely vibrant reddish colour, it originates from the South of India - in the region formally known as Madras - now called Channai. Our version blends authentic spices like cumin, coriander, turmeric and tamarind with garlic and chilli for a wonderfully rounded and flavoursome curry - with a nice spicy kick to it.

Ingredients - Vegetable Oil, Water, Salt, Coriander, Tamarind, Cumin (5%), Turmeric, Chilli (4%), Maize Flour, Ground Ginger, Garlic Powder, Spices (contains Mustard), Acetic Acid, Citric Acid, Lactic Acid.

Patak's Curry Pastes make excellent marinades, used on their own or blended 50:50 with plain yogurt. Marinate meat then bake, BBQ or grill.

Beef Madras Recipe Serves 2

Ingredients:

2 tbsp Vegetable Oil

1 Medium Onion, Diced

70g Patak's Madras Curry Paste

250g Diced Beef 200g Fresh or Tinned Chopped Tomatoes

100ml Water

1tsp Fresh Chopped Coriander Leaf (optional)

Method:

In a medium sized pan, gently fry onions in oil until golden.

Stir in Patak's Madras Curry Paste, add beef and fry until sealed.

Add tomatoes and water, mix well and cover pan. Simmer on a low heat for 40mins until the beef is cooked.

Serve garnished with chopped coriander leaf (optional).

Equally delicious with chicken, lamb, fish or vegetables.
