Natco Turmeric Powder, also known as Haldi.

A tropical herb of the ginger family. A colourful, mildly aromatic and versatile spice used in most Indian dishes. Use sparingly. Turmeric has a mild flavour and is frequently used to add natural colour to dishes. Turmeric also has thickening properties and is commonly used to thicken sauces etc in Indian cuisine.

Turmeric is a primary ingredient in curry powder. It is used extensively in Indian dishes, including lentil and meat dishes, and in Southeast Asian cooking. In India, turmeric is used for both colour and flavour. Earthy and subtle in taste it is a harmoniser, unremarkable on its own it adds an undefinable flourish to many dishes. Turmeric is superb in dals and pulses in general and is particularly good with potatoes. Tomato based dishes and fish also go well with turmeric as it is a common ingredient in marinades.

Culinary Uses: Turmeric is used extensively in the East and Middle East as a condiment and culinary dye. In India it is used to tint many sweet dishes. Apart from its wide use in Moroccan cuisine to spice meat, particularly lamb, and vegetables, its principal place is in curries and curry powders. It is used in many fish curries, possibly because it successfully masks fishy odours. When used in curry powders, it is usually one of the main ingredients, providing the associated yellow colour.
